Produced by Martha Arcila. This coffee is harvested following strict ripeness criteria, floated, and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then
gently washed and then dried in temperature-controlled conditions until ideal moisture content was achieved.
Martha is the aunt of Carlos and Felipe Arcila that own Cofinet. As with their father Jairo whose coffee we also source, Martha is a third generation coffee farmer, who inherited several farms from her father twenty years ago. Until 2019, Martha focussed on volume, but since then, with the help of her experienced family she's doubled-down on specialty coffee production and this lot shows her hard work.
With dried cherry on the nose, lime acid and notes of chocolate covered raisins and panela sugar, this coffee makes for a satisfyingly lively espresso and cuts through milk like a dream.
